  • 5 oz baby arugula
  • 12 oz grape tomatoes on the vine (or cherry tomatoes on the vine)
  • 1/3 cup Italian extra virgin olive oil
  • 1 lemon
  • 1 tablespoon Tuscan Italian white wine vinegar
  • 2 ripe avocados
  • 1/4 red onion, very thinly sliced
  • 1 small shallot
  • 1/2 teaspoon dijon mustard
  • 1/4 teaspoon crushed red pepper flakes
  • salt and pepper to taste
